Directions
- In a large pot, heat the olive oil over medium heat (or use a splash of water or vegetable broth for an oil-free version).
- Add the chopped onion and sauté for 3-5 minutes, or until the onion becomes translucent.
- Add the minced garlic and sauté for another 30 seconds until fragrant.
- Stir in the carrots and celery, and continue to cook for about 5 minutes until they begin to soften.
- Add the chopped Swiss chard stems and sauté for an additional 3-5 minutes until they start to become tender.
- Pour in the diced tomatoes (with their juices), vegetable broth, dried thyme, dried rosemary, and the drained white beans. Stir well.
- Bring the stew to a simmer, then cover and let it cook for about 15-20 minutes, allowing the flavors to meld together.
- Add the chopped Swiss chard leaves to the pot and cook for an additional 5-7 minutes, or until the leaves are wilted and tender.
